The e-mail contains the e-gift card redemption code and instructions to redeem them at checkout. Our gift cards have no additional processing fees.

The easiest way is to simply turn your Apple Watch over and look on the back.  There will be an engraving around the heart rate sensor which will tell you which model and size you have. 

If you can't read the engraving because it is damaged, scuffed, faded, then you can go into your iPhone watch app and go to Settings  → General → About →Model.  Then you can simply do a Google search and your model should show up.
